Blackberry Ginger Vodka Sour

Ingredients
1 cocktail
- 1 cup (150g) fresh blackberries (or thawed frozen berries)
- 1 inch nub of fresh ginger, peeled and sliced
- 1/2 cup (100g) granulated sugar
- 1/2 cup (118g) water
- 2 oz vodka (also tastes great with mezcal!)
- 1 oz fresh lemon juice
- 1 1/2 oz blackberry ginger syrup
- 2 dashes aromatic bitters
- 1 large egg white (or 1 oz aquafaba)

Preparation
Step 1
Add all of the ingredients to a saucepan over medium heat.
Step 2
Stir and heat until the blackberries start to bleed their color and become tender.
Step 3
Use a potato masher and mash up the blackberries into a chunky pulp.
Step 4
Allow the mixture to bubble for 5 minutes, stirring often.
Step 5
Remove from heat and run the syrup through a mesh strainer over a glass container, pressing out the seeds and pulp to leave you with a clear blackberry syrup.
Step 6
Refrigerate the syrup for at least an hour before making a cocktail.
Step 7
Add all of the ingredients to a shaker and shake for 30 seconds without ice.
Step 8
Add ice and shake for another 30 seconds.
Step 9
Strain into a coupe glass and garnish with fresh blackberries and a thyme twig. Enjoy!

If you want a vegan option or are iffy about egg whites in your drinks, you can substitute with aquafaba, which is the liquid from a can of chickpeas.
